Spiced Pork and Pepper Skewers with Mango Sauce
Serves 8
Ingredients:
- 1 cup cubed, peeled ripe mango
- 2 tablespoons fresh orange juice
- 1 teaspoon fresh lime juice
- 1/8 teaspoon salt
- 1 small garlic clove, minced
- 1 tablespoon chopped green onion tops
- 1 tablespoon minced fresh basil
- 1 teaspoon minced jalapeno
- 1 pork tenderloin (1 pound)
- 1 large red bell pepper, cut into about 32 pieces
- 2 teaspoons olive oil
- 2 teaspoons Old Bay Seasoning
- Cooking Spray
For Mango Sauce:
Puree mango, orange juice, lime juice, salt and garlic in food processor or blender. Spoon into a bowl, stir in onions, basil and jalapeno. Cover and chill in the refrigerator.
Cooking Directions:
- Heat oven or grill to 450 degrees.
- Trim fat from pork. Cut pork into about 32 pieces (cubes).
- In a medium bowl, mix pork, bell pepper, oil , and seasonings. Toss well to coat.
- In a repeating pattern, thread 1 piece bell pepper and 1 pork cube onto each of the skewers.
- Place kebabs on a sprayed broiler pan or on the grill and bake 450 degrees for 8-10 minutes until the pork is done. Serve with mango sauce.

Quick recipe for dinner

4 (4 ounce) fillets salmon
3 tablespoons prepared Dijon-style mustard
salt and pepper to taste
1/4 cup Italian-style dry bread crumbs
1/4 cup butter, melted
Directions
Preheat oven to 400 degrees F (200 degrees C). Line a shallow baking pan with aluminum foil.
Place salmon skin-side down on foil. Spread a thin layer of mustard on the top of each fillet, and season with salt and pepper. Top with bread crumbs, then drizzle with melted butter.
Bake in a preheated oven for 15 minutes, or until salmon flakes easily with a fork.
Slow Cooker Spaghetti Sauce

1 med. onion, chopped
28 oz. can crushed tomatoes
6 oz. tomato paste
8 oz. tomato sauce
1/2 tsp crushed bay leaf
Sprinkle of garlic powder
1 tsp. dried oregano
1 tsp. dried basil
1 tbsp. brown sugar
1/2 tsp. thyme
Brown meat & onion, drain, put into slow cooker. Add rest of ingredients. Cover. Cook on low 7 hours. Drain the lid occasionally if able so it doesn't get too thin.

Fake Fried chicken
ReplyDelete6-8 Boneless skinless chicken breast
1 cup of low fat buttermilk
1/2 cup italian style bread crumbs
1/2 cup panko italian bread crums
Favorite hot sauce.
Mix dry ingredients
Add desired amount hot sauce to buttermilk and soak chicken in the buttermilk mix.
Roll chicken in bread mixture and place on baking sheet and bake at 450 for 30 to 45 min depending on oven.
I love this stuff, it's the best baked chicken I have ever tasted.
Mom's Easy POTATO CHIP ENCRUSTED FISH (OR CHICKEN)

4 tilapia fillets
3 tablespoons lemon juice
1 tablespoon butter, melted
1/2 cup crushed Potato Chips (Regular or Cajun for that extra kick.)
DIRECTIONS
Place fish fillets in baking dish (spray with non-stick spray). Combine the lemon juice and butter; pour mixture over fillets (save some). Top with crushed potato chips. Bake uncovered at 400 degrees for 10-12 minutes. Flip fillets over (gently so they don’t fall apart), pour rest of lemon juice/butter mixture over them and the rest of the crushed potato chips. Bake for another 10-12 minutes.
Works the same with chicken breasts; just don’t use the lemon juice and increase the melted butter to 3 tablespoons.

i have been making peanut chicken a lot this summer as it is quick and easy while being a little adventuresome. I buy a rotisserie chicken and take both breasts and dice them. add half a jar of bottled peanut satay sauce, one can coconut milk, 1 T. red curry paste and a squeeze of lime. Heat together for about 5 m,inutes and serve with fresh naan and basmati.
