Banana Batter French Toast

Here is a GREAT breakfast idea.  Try it this weekend and you won't be sorry!

It is estimated that it takes 16 to 21 times of repeating a task to make it a habit.  An old habit I am trying to reclaim is eating healthier foods.  I feed Mason fresh fruits and veggies everyday (good habit), but I am not so good to myself (as I sit here eating ice cream...bad habit!)

I found this receipe a few months ago on Receipe Lion and knew I had to bring it back to my repertoire of breakfast items.  It is absolutely delicious and I highly recommend it to any french toast lover!  I made it with both white bread and whole grain wheat bread.  Not only did I prefer the whole wheat bread, my husband did too.  Oh, and Mason, he of course, scarfed it down!  The overall taste was better and much more flavorful.  It is also the healthier option for you.  That's a win - win if you ask me.

Cooking Time: 10 min

Ingredients

1 ripe banana, mashed
1 egg
1 egg white
1/4 cup milk
1/2 teaspoon vanilla
2 teaspoons vegetable oil
4 slices whole grain bread

Instructions

1.Beat the banana, egg, egg white, milk and vanilla together in a small bowl.

2.Warm the oil in a large non-stick skillet over medium high heat.

3.Dip each piece of bread into the batter, turning them to coat both sides. Fry
   until brown on both sides. Serve with yogurt and fresh fruit, fruit syrup, etc.
