Breakfast/Dinner Quiche Recipe

This recipe was passed down from my roommate from college.  While visiting her, she made this for breakfast and it was so delicious, I just had to get the recipe.  It is a quick and easy way to get your day going.  What I love is that you can make it ahead of time and reheat it when you are ready to eat.  I have also cut it into squares and froze it for later use. 

This time I made it, I separated the ingredients into 2 smaller baking dishes.  I have also used a cupcake pan to cook small individual quiches too.  These are always a hit!


Steph's Quiche

Ingredients

1 tablespoon margarine or butter
1/2 cup chopped red or green bell peppers
1/4 cup chopped onion
12 eggs
1 (8oz) container of sour cream
1/2 teaspoon salt
1/8 teaspoon pepper
6oz (1 1/2 cups) shredded Cheddar Mont Jack cheese blend

Directions
  1. Heat oven to 325 degrees.
  2. Spray 12x8 inch baking dish with non-stick cooking spray.  melt margarine or butter in medium skillet over medium heat.  Add bell pepper and onion; cook 2-3 minutes or until tender, stirring occasionally.
  3. In a large bowl, combine eggs, sour cream, salt and pepper; beat with wire whisk until well blended.  Add cooked veggies and cheese; mix well.  Pour into sprayed baking dish.
  4. Bake at 325 degrees for 20-25 minutes or until eggs are set.
